ok i'm gonna up my game. i like h&h but too much turns it too light / loses strength. i'll try a big ol hunk of kerrygold

Keep the butter in the fridge so it's hard and you can cut off a bunch of thin slices. Stir vigorously with a fork while you're pouring the hot coffee over it and it will dissolve very well. Otherwise you end up with a big greasy blob floating on the top of your coffee.
