I mean, granted you can do the same with most calendar applications but I have it synced back to my nextcloud. it's nice having like one central calendar that kind of controls the rest.

Yeah, I have it synced to a caldav server I have running at home.
I should honestly migrate away from next cloud. I only really use it for caldav And photo backups, and there's probably better lightweight applications that do that.
Oh, and note synchronization is probably what I use it the most for.
I was wondering about migrating to nextcloud, but I think I'd end up in the same place as you. WebDAV and SFTP are pretty powerful.
I use radicale for the webDAV server and it manages my calendar and tasks.org tasks.
For my personal notes, I actually just use text files and Markor on Android and sync then back home just using SFTP. It has a quicknote file and it's just one really long file of little notes I write. It's good enough for my really light usage. Otherwise I do pen and paper.
I figure I can recreate what I'm doing with syncthing and maybe like a lightweight calendar and photo sync application. It would be nice to have remote access to my photos.
I love immich for my backups
