I suggested this when I heard the news that Omegle shut down. But if you think about it what’s the point?
1) there are no profiles
2) nothing is saved
So not really sure what would one leverage from nostr.

You could use Nostr to create a new profile each time someone wants to video chat anonymously and retain that for their session.
Relays could be used for interested users to find each other.
