The crux is: As a company that wants to stay in business and with leadership thereof that wants to stay OUT of prison you will always have to comply with court orders... and there will always be metadata.

Sooo what's the alternative? Well, going the self hosting path is clearly not for everyone (at least not if you want that your mail reaches its recipient in his walled garden), which leaves the "somewhat more privacy oriented" hoster like proton, tuta and so on...
