Frittatas are one of our go tos for using up extra eggs. Super easy and flexible enough to change it up with different meat and veggies.
-1lb meat of your choice (we typically use sausage, but have used bacon and ham before)
-1 bell pepper, chopped
-1 onion, chopped
-12 eggs
-8oz cheese shredded
-salt and pepper
-sour cream (for serving)
-salsa (for serving)
Preheat oven to 350F
Cook the meat, bell pepper, and onion in an oven safe skillet. We use a 14" cast iron.
While it's cooking whisk the eggs and add salt and pepper.
Once the meat, peppers and onion are cooked, add the eggs and top with shredded cheese.
Cook for 20-25 min.
Top with sour cream and salsa and serve.
