Cut them to flatten the stems. Steam for 5mins just to get the stem soft, then through them in a pan for 1 minute to brown only the stem while buds remain bright green.

I never cook the stems, just peel and slice into sticks and serve them as a table-vegetable in a cup of water or sliced and added to a salad. Very similar to the taste and texture of a kohlrabi
