This is how I am currently eating:

1- Quinoa Salad: With Mexican Beans, Mung Beans, Black-eyed Peas. When I eat, I add fresh mint, parsley, etc. I add greens.

2- Artichoke dish: After cooking with potatoes, carrots, and peas, I add one of Mexican beans, mung beans, and black-eyed peas. Lots of lemon.

3- Rice: Chicken and vegetables (potatoes, carrots, peas, corn)

4- Lahmacun. (Frozen)

I don't do it all together. This is my weekly menu. I do one, when I'm done the other. It's like a single diet. But I don't think so. When I want different food on the same day, I add lahmacun :)

I think it's a healthy diet. At least it's a great menu for kitchen sloths like me :)))
