Can I still use my old computer for other tasks if I am running a bitcoin and lightning node on it? Can I use windows still?

Yes but I wouldn't. I would also run linux.
You don't want to run a node on a windows pc that has malware.

What if it’s just using sparrow wallet and my signing device?
So, it will work fine and funds wouldn't be at risk. But a malware infected computer would let someone know if you're a worthy person to target.
