my dad worked for Merkel, one of the butcher shops in Queens NY. He taught me as a kid to break down beef, pork, chickens, deer & rabbits, then our own livestock a decade later. Mom & Dad escaped the rat race in the late 70's. Raising, processing & eating our own pasture raised prime rib, bacon & eggs!!
Now that he's gone, and we don't have animals, breaking down meat from the store saves me money and still brings back great memories... as do shows like this. thx jack!
