Dude... looks like an extremely great cut... my personal favorite... but that pan. I can't get over the pan.
Anyhow.... get a new pan.

Cast iron can be had at garage sales or flea markets.
Yeah I know. Like I said no go excuse.
At least I used tallow.
But I know pan is terrible.
