Meat wise fish, beef, and chicken.

Not really a fan of chicken because the broad range of texture depending on who cooks it. Chicken also has a contamination issue so cleanliness is most important.

Pork is a straight up hell no for me and caused major digestion issues when I was a little kid.

Don't you grind your own meat? I buy primals, and the leftover bits end up ground.

No we have several local farmers that do that. Local beef, chicken, or trash meat. Fresh, never frozen beef. I can buy butchered and packaged 1/2 or whole cow at a time if I wanted. I would like to find some unmolested local milk though.
