Oh shit do you want some potato facts?

Potatoes were brought over from Peru to Europe. Peasants didn’t want to eat potatoes because they’re a nightshade and other nightshades are poisonous. So peasants were forced to eat potatoes at sword point. Lords basically forced their adoption on the poor because potatoes were more nutrient dense yet worth less than other crops.

Did you know the russet potato used to be known as the Burbank potato? Yep Burbank, CA was named after the same man Luther Burbank. That potato varietal is resistant to the blight that caused the Irish potato famine.
