It's a realistic compromise between your values and reality.
in a world where Bitcoin is a payment option, my opinion on cash is less important
Realistically, not everyone will be accepting Bitcoin as payment, over the next while.
The next best thing, when transacting with businesses, next to Bitcoin, is cash.

Would you reject someone if they told you that they would accept bitcoin but that they needed to convert it to cash?

You hold yourself and other entities to different standards which is fine. You want other businesses to accept your uncensorable but debaseable cash but for your own personal business you'd prefer to accept only sound money.
Less of a dilemma and more of just a difference in standards
the first part assumes that the business doesn't accept Bitcoin either and my goals as a business for Bitcoin only are long term future goals
Bitcoin > cash > credit/debit in that order. I see no conflict. Aiming for 1 doesnāt mean you canāt hate on 3 .
