My question is will it delete/undo from the relays too or will it be like Iris where although you have the option to delete notes but they stay on the relays just get deleted from Iris only and when you open another client like Amethyst or Damus they seem to be intact.

Clients can only *request* deletion from relays. Whether the relay deletes or not is up to them.
