I struggled with this Kelly. I don't have nor can think of a lot of items I can soley do in the nuke, however the two things I can think of that are exceptional in the nuke are these.

1. It started with 7 minute asparagus. If you have a glass dish with a lid thats decently wide enough, put a little water in the bottom, knock the dry bottoms off some fresh asparagus spears and nuke for 7 minutes. 6 for al dented, 8 for soft. Usually.

You can also lay bacon over the green beans and nuke, yes with lid on. It should cook well.

Another thing the microwave does amazing at is toasting almonds. Yeah, seriously. Get sliced almonds at the store don't try to make them, and then place on a microwave safe plate, and nuke for 15- 30 seconds, you'll have to play with it. Livens up salads and green bean dishes.
