1. Peel the ginger skin.

2. Cut the ginger into slices.

3. Pour salt and mix thoroughly with the ginger.

4. Ginger will be soft, pour off the brine.

5. Rinse to remove the salt and squeeze the ginger dry. Do this 3-5 times to reduce the ginger's taste.

Seasoning steps

1 Add sugar to ginger and mix until sugar dissolves.

2 Squeeze lime (if you don't have any, use vinegar instead) and add a little salt. Mix well.

3 Pour into a container with a tight lid and put in the refrigerator.
