I am not an ipa drinker because its usually in the back of peoples fridges. Although I must say the pineapple and apple intrigue me. How did you arrive at your choice of yeast seeing as there was no nostr help

I did a lot of research on yeasts and given that I want to try something unique, I wanted something that balances bitter and fruity flavors. Also, this is the perfect time of year to use a yeast that ferments relatively quickly at these temperatures.
