Which Lightning wallets do you guys use for your profiles? I'm looking for ones that have strong privacy features implemented in them.

ECash (via the Cashu protocol) is great and instant onboarding. I have had issues with running my own lightning node. eCash with a LNURL so far is working great.

npub.cash is also a good cashu option. Easy setup and scaling if you want to manage several npubs.
