How does multi-sig on a hardware wallet prevent someone from taking the hardware wallet and just accessing the funds by forcing you to give them the passcode?
If that makes sense?

$5 wrench attack. Now it cost $28.75
We are hoping inflation makes it too expensive to get the wrench.
an attacker may force you to sign, but if you have a multi signature wallet, it means, other people (not living with you) has to sign as well (or you have multiple hardware wallets to sign, bad setup), one key won't do.
As a decoy, you can have a hardware wallet with a key that is part of a multi Sig where your large stash is protected, but that wallet will have a small percentage of your stash. An violent attacker may get that, but not the larger stash if you have a proper set up. And that means trusting other people with additional signatures to access your funds.
What you’re describing sounds like single-sig with paraphrase.
Do you need one hardware wallet for each signature?
Preferably different manufacturers for each to get the extra security benefits of mitigating hardware exploits.
you don't need any, but is advised, preferable the ones that follow the rules of thumb in terms of security, here an article I liked about it in stacker news, shot out to nostr:nprofile1qqsrtuazdng7waddzmdd3nyw36w5sfvler95vgcte9nreqf8jtwlyvgpz4mhxue69uhhyetvv9ujuerpd46hxtnfduhsz9mhwden5te0wfjkccte9ec8y6tdv9kzumn9wshsz9nhwden5te0wfjkccte9ekk7um5wgh8qatz9uj060zu

But every person that holds a key could have one, question is,
What is the security level you need?
Is defined in terms of the amountb you are protecting and what percentage of that amount is your life savings.
for examole, do do not use any hardware for wallets used to spend for goods and services with your mobile, only for those wallets used for your life savings
