Why not use just one paid relay? Will I be able to find content from people I follow or only if they are also using the same relay?

They need to use the same paid relay, yes. But that should teach them a lesson. Whats the point of posting to a relay if your content is competing with spam bots everywhere?

Only because no paid relay provider is offering inbox relays. They are unfortunately only focused on the outbox side.
But they could give you a relay that anyone can post to you while filtering the spam for you. You pay to receive your followers replies so that your followers don't need to pay.
