I recommend you to use Fedora Silverblue as your Linux distribution since it comes hardened compared to other arch Linux distributions and also take a look at these two websites.

Yeah I know that’s true about MacOS. Unlikely I’ll be able to switch off of it for the media creation reasons but getting off so many cloud services (or using them encrypted) is the goal in the short term

Vpn's are useful to some extent to hide you from a third party but as you say most are honeypots for the simple fact that they are obliged to comply with the legislation of the country in which they operate.

The only viable option is tor and i2p.

you can always add a layer to protect you with p2p, thing is p2p has greater utility, if you are on a private network it is more private than any other solution just look at bittorrent

You don't understand p2p networks and you don't understand SimpleX.

p2p exposes your ip to each user

simplex exposes your ip to each relay

p2p works with no internet

simplex does not

p2p has far more potential than client servers
