So if I can run both Bitcoin Core and Knots side by side, would I still be able to run Datum with Knots if I prune as it syncs since I already have Core not pruned/fully synced?

Or should I just quit while I'm ahead and stop tinkering/learning stuff I'm likely not even going to need to put into practice?
