privacy and mobile phone:

do not use a spiphone which cannot be made private. it is spyware by design, sending all of your information and app data constantly to apple. you cannot turn that feature off.

you can use android, but without google. android was developed by google but it is opensource. you can use android without gaaps and without a sim card privately.

the only phone providing privacy is a linux phone which is able to disconnect the sim card(and the battery as well). linux phones are in their infancy. the future belongs to them.
