Do you mean sweet and bitter are different varieties? They are bitter when not ripe and sweet when ripened. Idk how to tell the difference
Yep, different varieties. Sweet persimmons are still crunchy (like a young pear) when they ripen, but bitter ones have to go pretty gloopy or they will ruin your mouth.
Sweet persimmons go really well with mascarpone whipped with sesame, bitter persimmons (which go sweet when dried) are good for preserving over winter.
