why are open source projects, which aim for freedom of expression, a cryptocurrency for monetary freedom, etc., hosted on a non-open source platform by a company that wants the opposite of the open source projects it hosts?

Are you talking about GitHub? Yes, I also think it's horrible. I'm slowly moving my stuff to https://git.fiatjaf.com/ and trying to use NIP-34 for code contributions.

Probably because there are no better platforms for code hosting. Self-hosted solutions tend to disappear too easily.
