Maybe because I bought a lot, it didn't have the option for lightning, so I paid on chain. I'm guessing BTCpay server won't offer lightning if there isn't enough incoming liquidity?

Yeah, that's probably correct. I'll talk to them about adding more liquidity to the server in the next day or so.

Paying lightning for their soap would be pretty cool if I go with them again in the future.

Yeah I used LN when I tested the server. Ill ping them. Because fuck the recent onchain fees. 😅
