"Broke into" doesn't sound right. Does iOS backup your signal to icloud? This is my first thought when watching this. They pulled the text from an iOS icloud backup

When I was on iOS it did not back up Signal anywhere. If you switch phones your contacts are synced but not your content.

I remember seeing a toggle for icloud in icloud backups though if I remember right.
