Today’s delicious lunch:

This is one version of what I call β€œcheesy chicken” but Paul wants to call it β€œchickeny cheese”

Chicken tenders seasoned with tarragon, garlic powder, onion powder, and pepper, covered in cream cheese and baked under a blanket of Swiss cheese.

I served it with steamed baby broccoli and a dish of pasta with leek greens, garlic, cream, cream cheese, and whey. 😚 πŸ‘Œ

Don’t let anyone tell you you can only eat the white part of a leek; this is a super sauce I sometimes add mushrooms to. It’s also good made with buttermilk, but I used my whey from both yogurt and cheesemaking.

Are the leek greens tough? I've always hated the waste of it 😫.

They’re not tough! I cut them into little ribbons and saute them in butter until blanched, then cook build the rest of the creamy sauce around them and cook the rest of the way. Super good.
