We just use a regular pot on the stove on the lowest setting possible. My crockpot, even on low, will get a rolling boil after a while. I thought you want a few bubbles, which is about all, or it will get cloudy. We are just starting this journey recently as well. My wife made it first a few weeks ago, believe it or not, from a turkey carcass we put in the freezer 6 months ago, and it was YUMMIE! We have made it a couple of times since.
