Can you help me brainstorm what kinds of companies, if they were active on Nostr, would most likely sell more of their products or services?
I would say any small handmade crafts.

Things like soap, leather goods, clothing. Or maybe Rare food products, things like saffron. I know there's already one vendor on nostr that does saffron but if there were more honey producers or, I don't know, hard to find spices.
