Here's mine:

🍲The Poor Man's Goulash Stew!

Beef: 2 lbs (900g) chuck roast, cut into 1-inch cubes

Onions: 2 large, diced

Garlic: 4 cloves, minced

Red Bell Pepper: 1, diced (optional for color and sweetness)

Tomatoes: 2 medium, chopped (or 1 can of diced tomatoes)

Paprika: 3 tablespoons, preferably sweet paprika

Carrots: 2, sliced

Potatoes: 2 large, cubed

Beef Broth: 4 cups

Bay Leaves: 2

Salt and Pepper: To taste

Vegetable Oil: For browning the meat

Sour Cream: For serving (optional)

Fresh Parsley: Chopped, for garnish

Mustard: Increases thickness

Brown the Meat:

Heat some oil in a large pot over medium-high heat. Season the beef cubes with salt and pepper, then brown them in batches. Remove the beef and set aside.

Cook Onions and Garlic:

In the same pot, add a bit more oil if needed, then cook the onions until they're translucent. Add garlic, cook for another minute until fragrant.

Add Paprika & Vegetables:

Lower the heat and stir in the paprika, making sure it doesn't burn. Add the bell pepper, tomatoes, carrots, and potatoes. Stir well.

Combine Ingredients:

Return the browned beef to the pot. Pour in the beef broth, add caraway seeds, and bay leaves. Stir to combine.

Simmer:

Bring the stew to a boil, then reduce to a simmer and stir in a tablespoon of mustard. Cover and cook for about 2-3 hours, or until the beef is tender. Stir occasionally, and if the stew seems too thick, add more broth or water.

Season and Serve:

Remove bay leaves. Check for seasoning, adding more salt and pepper if needed. Serve hot, optionally with a dollop of sour cream on top and a sprinkle of fresh parsley.
