I could be totally wrong but I would suspect that collecting the food waste from many, potentially widely distributed sources is going to eat up a lot of your time. Might work best to have 2 or 3 high yeild food waste sources

Yes, ideally, you would be collecting from a handful of places, in the beginning.

As your operation grows and you require more waste, you can go collect from more places.
