Have you tried making some? I used to make it with a counter dehydrator. You can ask the butcher to slice the beef at the desired thickness depending on how you like it.

ooooh, no I haven't tried that or thought of it. I think I'll need some further guidance but definitely down to make it when I settle down back to having a home and aquire a dehydrator. I totally digging the prep movement and this would be the go to one for me.
What thickness do you like yours at? I am def not a jerky connoisseur for the fact I've been limited in eating it due to the spices.
In that case, you could start by getting a big cut of beef and trying different thickness to see what you like, I'm pretty sure you can dehydrate with the oven to start. Of course, if you want a dehydrator I have to recommend a Bitcoin mining dehydrator but that is hard to find.

A couple of years ago some friends freeze dried beef heart and other organs and meat... Volume goes way down but supposedly still fully nutritionally packed. I was all over it. It was a super delicious treat.
So all this and preserving meat been on my mind since then.
