A consideration: if you have, say 1 BTC in a UTXO, and buy a coffee, the “change” (0.999 BTC) is returned to you and could be visible to the coffee seller.
I’m sure there are some ways around this. That said, various UTXO denominations in your wallet could be useful. Opp-Sec.
