Wallet of Satoshi if it's an attended stand. If unattended, print the Bitcoin address as a QR code. Reusing addresses isn't best practice, but in some low tech situations it's fine.
Strike would work, for a business dealing with btc is a tax nightmare, strike will allow her to accept both lightning and onchain btc, but receive dollars to prevent tax issues. If she’s trying to accept under the table, then something custodial like pheonix for lightning payments and blue wallet for on chain would be useful.

My brain goes to seeing up an LCD that adjusts the sat price according to daily fluctuations. Then I tell myself that shouldn't matter. Pick a price and go with it.
I'm pretty sure Breez wallet has a Point Of Sale mode. It looks really easy to use.
