you organise your own content by following people who's content you want to see and by muting those you don't want to see. Some apps also allow you the muting of keywords. So if someone is for example not interested in bitcoin or food (who doesn't like food) you can mute this words and customise your timeline. Then there is lists you can create or you follow other people's lists like bitcoin, food, gaming, developers, whatever.
It will take a short time to grasp this but once you do you'll have an awesome nostr experience and from there it only gets better. Your choice of nostr client will also impact your experience. Some are similar to twitter and support many other NIPs. Others are very feature and content rich supporting most (or all) NIP's. Personally I like Snort and noStrudel as my web clients and I use Plebstr on my phone.
