Snag a Pixel phone and install GrapheneOS. I believe most Pixel phones are able to install that OS but check beforehand before making the purchase.

It may not be perfect, but it is a step in the right direction.

Alternatively you can go with a Linux phone but be ready for a change with your phone usability. Even then, not all the hardware is open source so questions remain if this is 100% private (probably not...).

Among the dumb shit he said that's tough to verify, he claims Google's new terms allow them to brick your phone if you install a custom ROM/OS/side load. And something something no longer boot loader lock.
