Not sure about live, but if you are doing a recording to post later, you can chroma-key it out or even just make a mask in your post production editing.

Or if you want to get a little janky, you could make a scene in OBS and record it there. Sounds hard, is really not. You make a scene with whatever you want your background to be, then create a new source that would be video capture and you can arrange them on the screen in any way you want.

This sounds like a viable solution that I’d be happy to walk you through, or even set up for you if you can’t find anything easier. Just a suggestion.

I’m stuck on this now and I’m thinking of different solutions lol. Seriously think OBS would be your best bet. This is a mock up I just did to kinda show what I’m talking about. If you need more explanation, feel free to ask

I would recommend using the “Use dual monitor” feature under “General” settings in Zoom and then capturing that new window. That way you can easily get rid of all the controls and other UI elements you don’t want it the recording, and I believe it’s higher quality.

The only odd this with this is that you need to have at least 3 devices connected to that Zoom call, so you, the guest, and your phone for instance. Otherwise, Zoom won’t let you pin the guest to the dual screen window.
