As an enthusiast (but not a craft cocktail expert), I would argue that the flavor of a well-made Sazerac is anything but simple.
The absinthe (best as a rinse, not a pour) brings layered bitterness and licorice/anise hints; the sugar or syrup adds body and sweetness, and the rye whiskey offers more weight along with spice and grain flavor, plus of course the boozy heat.
I like them 🤷♂️
