Is it possible to de-google an android phone? I remember I installed a android like open OS sometime ago but I don’t even remember the name of it but it wasn’t updated after sometime so it wasn’t possible to install it to current phones.
I’ve heard of Graphene OS and Calyx OS.

How does it work day to day: do you swap your SIM card from one phone to another ? Or you just use the Android phone without the sim, just on wifi ?
GrapheneOS is great, very easy to install and really reliable
