What data do the relays hold? Don't the relays simply facilitate the post to Nostr? Do they also collect data like our emails and IP addresses which could be used for doxxing If they leak it?

They can see your IP and everything you are looking at in the app. So, make sure you trust your relays. They know exactly who you are and what you are doing on Nostr.
I understand this is not Amethyst's problem but If there is wide spread adoption of Nostr, this will leave many people vulnerable to doxxing. Especially non-technical people who don't understand the relay/client system. Honestly, all of this makes Nostr feel just like X.

Think of it like a vpn to the dark web, or secret internet that hosts websites or services
Tell your nostr client to use tor and add the tor relay and boom, safe and secure
