An at home freeze dryer is one of the best ways to preserve meat such as ground beef and thinly sliced steaks and roasts. It's much better than the quality you can get from the store.

I freeze dry raw beef with a max temperature of around 100°F and package in mylar bags with an oxygen absorber. Then when ready to eat, I'll cold soak it for several hours and cook it up as typical — works great.

That's such a cool technique. I'm glad it works for you.

I'm using the very old school technique of leaving the meat alive in the pasture until I need it. Not only does it stay fresh, but it increases in size and weight.

How long does it keep once freeze dried?

It can be about 20 years.
