What is emission intensity and how is it measures and how do other industries compare over the same timeline?

I can only presume it's a function of energy consumption vs. efficiency of the mining rigs deployed. As they become more efficient there is a gain in hash that rises faster than the CO2 produced for the energy input.
Since specs are given of both variables by all mining manufactures that data is easy but gets harder trying to figure out how many of what type of miner is deployed and where.
I'm just spitballing though.
That’s part of it. Other factors are that bitcoin uses a lot more sustainable energy now compared to 3 years ago
Grams of CO2e emissions per KWh.
eVs by contrast emit around 480g CO2e per KWh and that has reduced barely at all in the last 3 years.
