Each group can define its own set of relays.
Hopefully your phone has a secure passphrase to encrypt the disk.

I don't see how disk encryption helps
someone steals phone and uses either physical threat or one of those machines to unlock it
could even be a government agent in an airport, for example
that's why we don't store our life savings on our phones right?
