I am running server on ubuntu - Tor relay - Mac Mini 2014. Actually I am thinking about second ntb. I have dell ntb with windows for school things. For my usecase but I need macOS and linux. I am thinking about buy Macbook Pro 13 from 2017 without touchbar. It is last model without T2 security chip and last model ntb with changeable SSD ever. Instalation linux is without problems here. On macs with T2 or with Apple silicon chips are problems with instalatioin.
