I don’t know if it has a name in English, but in Bangla it's called "Daaler Bori" or "Kumra Bori". It is made mainly with a specific kind of lentil. You basically mash the lentil with a little bit of squash and whip it until it gets all frothy and airy. Then you just shape it like in the photo and keep under the sun for a few days until it gets dry.

You don’t eat it as is. Either fry it or put it in veggies or curries. You can store it at room temp for a long time.

We do the mashing, whipping and shaping all by hand so its very time consuming.

In Punjab they have a similar thing called wadiyan and these are usually bigger and different coloured ones.
