Homemade Ghee so Easy! ๐Ÿ˜‹

1. Melt 1lb butter and simmer very low heat approx. 20mins. It will make crackly noises and milk solids will both rise to the surface and sink to the bottom.

2. When it is clear and golden and gets quiet, it is done. Make sure the milk solids on the bottom donโ€™t burn, tho it adds to the yummy flavor if you let it turn lightly golden brown.

3. Carefully skim the milk solids off the top, no need to get them all.

4. Strain into a heat-proof jar.

5. Spoon off any foam that made it through the strainer.

6. Let it cool then refrigerate till set.

7. Remove from fridge so it softens for easy use. Ghee can live on the counter, it doesnโ€™t go bad.

Tip: Immediately use dish soap and hot water to clean the pot and strainer, easier now than later ๐Ÿ˜‚

Mm no, those are the milk solids that you are removing from the butter, making it largely free of lactose and casein. Clarifying the butter also removes the water content, so ghee has a higher smoke point than butter.
