Not an expert on Android but if I were to make the switch, I would want a device compatible with grapheneOS (privacy oriented OS with Android app compatibility). Google Pixel would be the way
Pixel bought with cash, flashed with Calyx or Graphene. Good privacy improvements over stock Android.
