Running a local model is the most private. It's pretty easy to fo with Ollama and OpenWebUI
If you don't want to spend $500 on a GPU, then Venice (supported by Erik Voorhees) looks like a pretty good option :

That's probably what I am gonna use for what I need. Though two months ago when I gave it a go, found their Claude dumber than the one I'd been using with subscription. Same model though. And it still ended up being quite expensive not as advertised.
