I love this guide. Built a nodebox a few months ago on a dell Optiplex 9020 SFF. Learned a ton. I find the same performance issue with EmbassyOS on a raspi, I recently installed EOS on an optiplex 3050m and what a difference! Next step is EOS on a system76 meerkat. You can get the same specs as embassy pro for $500-$600 less. ⚡🤘

I'm a big fan of EOS. The team is awesome. Great customer support. Their goal is sovereign computing, not just bitcoin/lightning so they have a lot of services on offer, and a lot more planned. The downside to EOS right now is services are only accessible on LAN or via Tor, but clearnet support is planned for this summer.
